Cute Carrot Cake

This cake is really soggy – nom nom nom. If you don´t like soggy cakes, then don´t pour the coconut frosting over it. Skip the 3rd step and serve a dry carrot cake – that is also nom nom nom 😉

Cute Carrot Cake:

Ingredients:

Cake:

400g of carrots

400g of flour

150g brown sugar

150ml of orange juice

100ml of oil

1 tsp. of vanilla extract

1 tsp. of cinnamon

1/2 tsp. of baking soda

1 pinch of nutmeg

1 pinch of salt

 

Frosting:

150ml of coconut milk

50g of sugar

 

Decoration:

Mint or thyme or rosemary

Cute Carrot Cake

Preparation:

  1. Preheat the oven to 180°C / 160°C fan / gas mark 4.
  2. Dough: Peel and grate the carrots. In a big bowl, mix the carrots, flour, brown sugar, orange juice, oil, vanilla extract, cinnamon, baking soda, nutmeg and salt. Pour the dough into a baking tin. Bake the cake in the oven on the middle rack for approx. 45 minutes. Remove the cake from the oven.
  3. Frosting: In a pot, mix the coconut milk and sugar. Pour it on the top of the warm cake.
  4. Cut the cake into 8 triangles and stick mint or thyme into the outside of the cake pieces.
