Lemon Thyme Jam

How do you like to celebrate Easter? With a long four course meal or with a breakfast what last into the late evening?

We love long breakfasts, especially with lots of jam, curds and marmalades 🙂

Here is one of our favourites: a delicious Lemon Thyme Jam (some would call it curd – call it however you want 😉 ).

You can eat every bread with this jam or cakes or muffins or biscuits or… 😉


Lemon Thyme Jam

Preparation time: 5 minutes

Rest time: Over night or at least 2 hours

Cook time: 10 minutes

Ingredients for 300ml

200ml of lime juice (5 limes)

100ml of water

3 tbsp. of caster sugar (or non if you don´t like it sweet)

1 tbsp. of cornstarch

1 tsp. of coconut oil

1 thyme stem

Pinch of salt

vegan Lemon Thyme Curd


  1. Halve and squeeze the limes. Pour the juice into a sauce pan. Add the thyme stem, put the lid on the pan and place it in the fridge over night (or at least two hours).
  2. Take the pan out of the fridge and remove the thyme stem. Add water, sugar, cornstarch, coconut and salt. Place it on the cooker and cook on a medium heat. Stir constantly until the jam thickened (about 10 minutes).
  3. Pour the jam into a jar and allow to cool down.

Hint: The lime thyme jam keeps well in a closed jar in the fridge for about 1-2 weeks. Remove the lime thyme jam out of the fridge 15 minutes before eating.
