I am not sure if everyone likes this recipe, but maybe you like to try it. Trixilie and I like it 🙂
Ingredients for 2 people:
40g of dried beluga lentils
50g of plums
60g of black currant
4 big violet onions
50ml vegetable stock
if you like a bit of salt and pepper
a bit basil as topping
- Rinse the lentils thoroughly. In a pot, mix the lentils and 120ml of water (no salt!) and bring it to the boil. Let it simmer at medium heat for 15 minutes, then drain the lentils.
- Peel the onions. Slice the onions in rings. In another pot, mix the onion rings and 2 tbsp. of stock and bring it to the boil. Let it simmer at medium heat for 5 minutes.
- Quarter the plums and remove the stones. Cut the plums into small pieces. In a blender, place the plums, currants, lentils and the rest of the stock. Blend it until smooth and season with salt and pepper, if you like.
- Serve the onion rings and the plum currant sauce on two plats with a bit of basil.
